<li><strong>Cook the apples</strong>: Preheat a skillet over medium heat and melt the butter. Add the diced apples, followed by maple syrup, vanilla bean paste, and cinnamon. Stir occasionally and cook for about 5 minutes, until the apples are soft and caramelized. Remove from heat and let cool slightly.</li>



<li><strong>Assemble the cups</strong>: Spoon the cheesecake filling over the crust layer. Top generously with the warm caramelized apples.</li>



<li><strong>Chill (optional but recommended)</strong>: Refrigerate for 30 to 60 minutes to allow the layers to set and flavors to meld.</li>

<li class="">Warm a large skillet over medium heat and add the olive oil.</li>



<li class="">In a small bowl, stir together all the spices. Season both sides of the chicken thighs.</li>



<li class="">Place the seasoned chicken in the hot skillet. Cook for about five minutes on each side or until the internal temperature reaches 165 degrees. Transfer to a plate.</li>



<li class="">Add the ghee or butter to the skillet and let it melt.</li>



<li class="">Stir in the sliced shallots, coconut sugar, honey, and Dijon. Mix until everything begins to caramelize slightly.</li>



<li class="">Add the apples and stir well so each slice is coated. Cook for about five minutes until the apples soften and release their juices.</li>



<li class="">Slowly pour in the apple cider and reduce the heat to low. Simmer for about five minutes until the sauce thickens. You can add a quick slurry if you prefer a thicker glaze.</li>



<li class="">Return the chicken to the skillet and spoon the warm apple mixture over the top.</li>



<li class="">Garnish with fresh thyme and rosemary before serving.</li>

<li class="">Squeeze of 1/2 lemon or orange (1 tbsp apx)</li>

<li class="">Preheat your oven to 350°F. Spray a 9&#215;13 inch baking dish with olive or avocado oil spray. Set aside.</li>



<li class="">Peel, core, and slice the apples. Slice them pretty thin. You don&#8217;t want huge chunks of apples.</li>



<li class="">In a large mixing bowl, toss together the apples, maple syrup, corn starch, orange juice, orange zest, vanilla, cinnamon, ginger, and nutmeg until well combined.</li>



<li class="">Transfer the apple mixture to your prepared baking dish.</li>



<li class="">In another mixing bowl, whisk together the almond flour, monk fruit, cinnamon, ginger, and salt. Roughly stir in the molasses (it will be sticky and will mix better into the crumble when you cut the butter in). Using a pastry cutter or fork, cut in the butter until the mixture becomes crumbly and the butter and molasses is evenly distributed in the crumble. Stir in the rolled oats.</li>



<li class="">Sprinkle the topping evenly over the sliced apples in the baking dish. Bake for 50-55 minutes, or until the topping is golden brown and the apples are soft. Check at the 45 minute mark, because some ovens bake faster than others!</li>



<li class="">Serve immediately plain or with a scoop of ice cream on top. I like to serve mine with my high protein cottage cheese ice cream.</li>
