Ingredients
- 2 cups almond flour
- ½ tsp baking soda
- ½ cup coconut sugar (or sweetener of choice)
- 1 tsp cinnamon (ground)
- ½ tsp ginger (ground)
- ¼ tsp allspice
- 1/2 tsp salt
- 2 tbsp coconut oil melted and cooled (or grass fed butter or oil of choice)
- 3 tbsp molasses (organic)
- 1 egg (large, organic)
- 1 tsp vanilla extract

How To Make Them
- In a large mixing bowl, whisk together the almond flour, baking soda, coconut sugar, ground cinnamon, ground ginger, allspice & salt.
- Add in the coconut oil/butter, molasses, egg, and vanilla. Mix until you have a cookie dough consistency. Chill the dough in the fridge for 30 minutes. This is important or the dough will be too sticky to work with!
- Line a baking sheet with parchment paper or a silicone baking mat. Preheat the oven to 350°F.
- Remove the cookie dough from the fridge. Use a cookie scoop to form 16 cookies (about 1 ½ tablespoons of dough per cookie for reference) and arrange them 2 inches apart from each other on the baking sheet.
- Gently press on each cookie to slightly flatten. This helps them spread out and bake evenly.
- Bake in the oven for 10-12 minutes. Allow them to cool on the baking sheet for 5 minutes and enjoy!

Store your leftover cookies at room temperature for up to 4 days, in the fridge for up to a week, or wrap individually and freeze for up to 3 months.
