I would not recommend marinating your chicken for more than 8 hours. This is because the acidity in the marinade will actually start cooking your chicken! Yikes!
You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, reheat them in the oven at 325°F for 10 minutes wrapped in foil. This will give you those same delicious crunchy tacos!

Add all sauce ingredients to a food processor & blend until smooth. Set aside in fridge while you make your tacos.
In a large bowl, mix your orange juice, lime juice, garlic, jalapeno, cilantro, olive oil, chili powder, oregano, cumin, salt & pepper together. Add your chicken breasts. Let the chicken marinate for 30 minutes to up to 8 hours.
A few minutes before the chicken is done marinating, turn your oven to 400°F. Spray a large baking dish with cooking spray & place chicken in the dish. Discard extra marinade. Bake for 20-30 minutes or until all the way cooked through. Shred your chicken.
Turn your oven up to 425°F & line a large baking sheet with parchment paper.
Lay your tortillas out on the baking sheet & spray with cooking spray. Flip them over and bake for 2-3 minutes (You just need them soft enough to fold over your filling). Layer each tortilla on one side with shredded cheese (if desired), chicken, onion (optional), & any other desired fillings. Fold the other side of the tortilla over your filling & press down gently to make it stick.
Once all of your tacos are made, place in the oven for 15 minutes or until the cheese has melted & your tortillas are crispy.
Serve immediately with your avocado sauce and enjoy!
