This Cookies & Cream Protein Cookie Butter is such a delicious high protein snack! It has a gooey, rich cookies & cream base with sugar free chocolate chips and a crunchy cookie topping! My two weaknesses are Oreos and any kind of cookie butter or cookie dough so I decided to make a cleaner version packed with protein!! You can honestly keep these in the fridge for a while before they go bad if they last you that long! I put my leftovers in an airtight container without any Oreo topping. If you are topping your dessert with a cookie, don't put that on top until you are ready to enjoy your cookies butter or it will get soggy!

Combine all ingredients in a small mixing bowl and mix thoroughly. Your batter will be very thick.
Divide into 3 servings and let refrigerate for at least 30 minutes before digging in! Top with an Oreo cookie (or Prozis Oreo cookie substitute) if desired.
