Cookies & Cream Protein Cookie Butter

This Cookies & Cream Protein Cookie Butter is such a delicious high protein snack! It has a gooey, rich cookies & cream base with sugar free chocolate chips and a crunchy cookie topping! My two weaknesses are Oreos and any kind of cookie butter or cookie dough so I decided to make a cleaner version packed with protein!! There are only 107 calories and 14 grams of protein in each serving. Enjoy this cookie butter on its own or on top of a rice cake or however you would like!

Ingredients

  • Vanilla Protein Powder - Use 30 grams of your preferred protein powder. My personal favorite is the Prozis Vanilla Diet Whey Protein Powder.. You can use the code "KATIE10" for 10% off as well. I work closely with this brand and they are just the absolute best.
  • Cookies & Cream Protein Powder - My two favorite cookies & cream protein powders are by the brands Prozis and Flexible Dieting Lifestyle. The flavor is right on with both of these!   • Pecan Flour- 1 tablespoon of pecan flour. You can also use almond if that is what you have on hand. I love the pecan flour by the brand Rancho Pecana.
  • Coconut Flour - 1 tablespoon of coconut flour. I used the Prozis Organic Coconut Flour.
  • Swerve - 1/2 tsp granular Swerve, or zero calorie sweetener of choice.
  • Greek Yogurt - Use 1/4 cup of plain, non-fat Greek yogurt for added protein and creaminess!
  • Lily's Sugar Free Chocolate Chips - I used 14 grams of the Lily's sugar free dark chocolate chips.
  • Oreo (Optional) - I had an extra sweet tooth when I made this can you tell? I did crush up one Oreo on top of my overnight oats before digging in. I have a great low sugar Oreo substitution cookie you can use here.

How To Make It

  1. Combine all ingredients in a small mixing bowl and mix thoroughly. Your batter will be very thick.
  2. Divide into 3 servings and let refrigerate for at least 30 minutes before digging in! Top with an Oreo cookie (or Prozis Oreo cookie substitute) if desired.

How Do You Store Leftovers?

You can honestly keep these in the fridge for a while before they go bad if they last you that long! I put my leftovers in an airtight container without any Oreo topping. If you are topping your dessert with a cookie, don't put that on top until you are ready to enjoy your cookies butter or it will get soggy!

  • 1 tbsp pecan flour (almond works too)
  • 1 tbsp coconut flour (I used the Prozis Organic Coconut Flour.)
  • ½ tsp granular Swerve (or zero calorie sweetener of choice)
  • ¼ cup plain nonfat Greek yogurt
  • 14 grams Lily's sugar free dark chocolate chips.
  • 1 Oreo cookie or other cookie or choice (optional, for topping)
