These Dijon & Goat Cheese Roasted Potatoes are my husband's favorite potatoes that I make! These roasted potatoes are baked to perfection and topped with a homemade Dijon dressing and goat cheese. The dressing almost makes it like a potato salad! These are so good, you just have to try them! These potatoes are gluten free and vegetarian friendly. I hope you give this recipe a try and love it as much as I do! Be sure to check out my Everything Bagel Sweet Potato Chips as well!
My main seasoning that I use in these potatoes is the Dan-O's Original Seasoning. I use the Dan-O’s brand of seasoning because it is zero calories & low sodium too! You can get so much more flavor with this seasoning because you don't have to worry about it being too salty. You can use the code COOKINGKATIE for 10% off your order with them as well!

Nutritional Benefits
Potatoes: Potatoes contain antioxidants and contain good sources of vitamin C, B6, and potassium.
Goat Cheese: Goat cheese is a good source of protein and healthy fats. The fatty acids found in goat's milk have antibacterial qualities as well as anti-inflammatory properties!
Ingredients
For the Potatoes:
Olive Oil - 2 tablespoons of extra virgin olive oil.
Potatoes - 2 pounds of Yukon gold potatoes, cut into cubes.
Dan-O's - 1 teaspoon of Dan-O's Original Seasoning. Use the code COOKINGKATIE for 10% off!
For the Dressing:
Olive Oil - 1 tablespoon of extra virgin olive oil.
Preheat your oven to 400°F. Line a large baking sheet with foil, and set aside.
Place the potatoes, olive oil, and Dan-O’s Seasoning on your baking sheet and toss to coat. Spread the potatoes out on your baking sheet and roast for approximately 25 minutes. I also broiled mine for 5 to get them a little crispy on the edges.
While potatoes are roasting, whisk together the dressing ingredients. Set aside.
Brush the dressing over the potatoes straight out the oven & serve.
You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for 30 seconds or so! You can also heat them up in the oven to keep them more crispy.
