My main seasoning that I use in these potatoes is the Dan-O's Everything Bagel Seasoning. It may sound weird to put in sweet potatoes but trust me...it is SO good! You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for 45 seconds or so. You can also heat them up in the oven to keep them more crispy at 250 for 15 minutes or so!

Preheat your oven to 400°F. Line 2 large baking sheets with foil or parchment paper and put a light drizzle of olive oil or some nonstick spray to prevent sticking.
Lay your sweet potato pieces flat on the baking sheets. Make sure none are overlapping/stacked on top on each other. Drizzle with the olive oil & season with everything bagel seasoning.
Bake for 25 minutes, or until they are soft enough to “smash”.
Use a fork to lightly smash each piece. Don’t push too hard or they will break apart and be mashed!
Mix together the butter, garlic, and parsley. Brush this mixture among the tops of the potatoes.
Turn your oven onto broil and broil until the edges start to crisp, about 5 minutes.
Sprinkle the Parmesan cheese on top immediately after removing from oven. Allow to melt and enjoy!
