- 1/4 cup coconut sugar (organic)

- 1/2 tsp vanilla bean paste (You can substitute for vanilla extract if you do not have vanilla bean paste)
- 1 cup almond flour (organic, fine)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chocolate chips (organic, I like the brand Hu)

What Skillets Do You Have?
Pictured here I am using two mini cast iron skillets. They are 8.5 x 6.1 x 1.7 inches. You can use one medium skillet rather than two mini ones if you would like as well.
How To Make It
- Preheat your oven to 350°F. Spray two mini cast iron skillets (8.5 inch) or one medium cast iron skillet with avocado oil. Set aside.
- In a medium mixing bowl, combine the almond flour, baking powder, salt, coconut sugar, cashew butter, maple syrup, and vanilla bean paste. Mix with a rubber spatcula until you have a nice, thick dough and all of the ingredients are fully incorporated.
- Fold in the chocolate chips.
- Press the cookie dough (dividing evenly) into your cast iron skillet(s).
- Bake for 15-20 minutes (15 minutes for a more gooey cookie). Top with some ice cream for the ultimate dessert. Enjoy!
How To Store
You can store leftovers covered with foil at room temperate for up to 3 days or in the fridge for up to 6 for best freshness. I like to reheat mine in the oven. To do so, just put your cast irons in the oven at 200F for 10 ish minutes.
