Ingredients

  • 1 15.5 oz. can organic chickpeas
  • ½ cup unsalted almond butter
  • ⅓ cup oat flour
  • ¼ cup granulated monk fruit
  • ¼ cup maple syrup
  • 2 teaspoons vanilla extract
  • ¼ teaspoon cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅔ cup Hu dark chocolate baking chips (100g)

How To Make Them

  1. Preheat the oven to 350°F. Prepare a baking sheet with parchment paper or a silicone baking mat.
  2. Drain, rinse, and pat dry the chickpeas. Roll them around in a kitchen towel to get the skins off. It's ok if a few are still on, just try to get off as many as you can to make your dough more smooth.
  3. Add the chickpeas to a large food processor along with all the remaining aside from the chocolate chips.
  4. Process until smooth. Make sure there are no chickpea chunks remaining.
  5. Fold in the chocolate chips by hand.
  6. Use a cookie scoop to scoop our 12 cookies and add to your lined baking sheet. Slightly flatten the tops because they do not spread a ton while baking.
  7. Bake for 12-15 minutes. Let stand on cookie sheet for 5 minutes before moving to a wire cooling rack. Enjoy!

Ingredients
  • 15.5 oz. chickpeas (organic, rinsed & drained)
  • 1/2 cup almond butter (organic, unsalted)
  • 1/3 cup oat flour (organic, fine)
  • 1/4 cup monk fruit (or granulated sweetener of choice)
  • 1/4 cup maple syrup (organic, or your preferred liquid sweetener)
  • 2 tsp vanilla extract (organic)
  • 1/4 tsp cinnamon (ground)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt (fine sea salt)
  • 2/3 cup chocolate chips (I use the brand Hu as a healthy, organic option. (100 grams))
Instructions
    Make the Chia Jam
  1. Preheat the oven to 350°F. Prepare a baking sheet with parchment paper or a silicone baking mat.
