Ingredients

  • Lemon Pudding Mix - 2 tablespoons of the Simply Delish Sugar Free Lemon Pudding Mix. Use the discount code KATIE10 for 10% off!
  • Cottage Cheese - 16 ounces of small curd cottage cheese. I use 1%.
  • Maple Syrup - 1/8 cup of organic maple syrup. You don't need much at all!!
  • Honey Thins - I use the sweet honey thins by Simple Mills as a healthier alternative to graham crackers. And you'd never know the difference!

How To Make It

  1. Combine all ingredients except for the graham crackers in your Ninja CREAMi pint container & freeze. This should take about 3-4 hours to be completely solid.
  2. Take it out of the freezer and allow it to sit out on the counter for 15-20 minutes so that it blends nicely.
  3. Blend the ice cream in your Ninja CREAMi using the lite ice cream setting.
  4. Make a divot in the middle of the ice cream. Add the graham crackers and then select the "mix in" setting.
  5. Immediately dig in and enjoy!

How To Store Leftovers

Store any leftover ice cream in the freezer for up to 6 months. When you are ready to enjoy it again, allow the container to sit out on your counter for 30 minutes and then dig in! You can also use the "re-spin" option on your Ninja CREAMi to fluff it up a bit more!

  • 2 tbsp. lemon pudding mix (I use the brand Simply Delish (way better for you ingredients and sugar free). Use the code KATIE10 for a discount on their site:))

  • 12 graham crackers (I use the Simple Mills sweet honey thins as a healthy alternative)
