Ingredients
  • 2 lbs chicken thighs
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup Greek yogurt (full fat)
  • 1 lemon (Zest of 1 lemon)
  • 4 teaspoons garlic (minced)
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika

    In a large mixing bowl, whisk together the olive oil, lemon juice, yogurt, lemon zest, garlic, oregano, thyme, Dijon mustard, salt, pepper, and paprika until well combined.

    Add the chicken thighs to the bowl and toss until each piece is fully coated in the marinade.

    Transfer the chicken and marinade into a 9 x 13 inch baking dish.

    Cover with a lid or foil. Refrigerate and let the chicken marinate for at least 4 hours, or overnight for the best flavor.

    Preheat your oven to 350°F. Bake the chicken, covered, for 40 to 45 minutes until cooked through and tender.

    Remove the cover and broil for 2 to 5 minutes at the end to achieve a golden, slightly crispy top.
