Preheat your air fryer to 300°F (I did for about 5 minutes while I was mixing my ingredients).Combine all ingredients into a medium mixing bowl except for the caramel syrup until fully incorporated.
Spray two mini cast iron skillets with nonstick spray. Divide the batter evenly between the 2 skillets. The measurements of my mini cast iron skillets are about 4” x 6 1/2”.
Add the caramel syrup in the middle of the batter.
Air fry at 300 for 5-6 minutes (5 minutes for a gooey center or 6 if you want it more cake-like)Enjoy immediately!
