Sweet Potato Shepherd’s Pie

This Sweet Potato Shepherd's Pie is such a healthier, yet delicious version of the original! It is such a well balanced meal with the veggie & meat filling and sweet potato topping. The traditional Shepherd's Pie dish is Irish and made with lamb or beef with a rich gravy & cheesy potato topping. This is such a popular classic dish but you know me, I like to make those healthier versions that are just as yummy! I have gotten so much positive feedback on this recipe on Instagram! Ingredients

For the Topping:

  • Sweet Potatoes - 1 1/2 pounds of sweet potatoes, peeled and chopped.
  • Italian Seasoning - 1/2 teaspoon of Italian seasoning.
  • Dan-O's Original Seasoning - 1/2 teaspoon of Dan-O's original seasoning. You can use the code COOKINGKATIE for 10% off!
  • Salt & Pepper - To taste.

For the Filling:

  • Olive Oil - 1 tablespoon of olive oil.
  • Yellow Onion - 1/2 of a medium yellow onion, diced.
  • Ground Turkey - 1 1/2 pounds of lean ground turkey.
  • Tomato Paste - 2 tablespoons of tomato paste.
  • Garlic - 2 teaspoons of minced garlic.
  • Smoked Paprika - 1 tablespoon of smoked paprika, or a little less depending on how strong of that flavor you want!
  • Chicken Broth - 1 cup of low sodium chicken broth.
  • Peas - 1 cup of frozen peas.

How To Make It

  1. Preheat your oven to 375°F.
  2. Place the sweet potatoes in a large pot with just enough water to cover. Bring to a boil and cook until the potatoes are tender, about 15 minutes.
  3. Drain and mash, then season with Dan-O’s & Italian seasoning.
  4. Heat up the olive oil in a large nonstick pan over medium-high heat. Sauté the onions for 3-4 minutes, then add in the garlic and cook for another minute or so.
  5. Add in the ground turkey and cook until the meat is cooked through, 165°F.
  6. Stir in the tomato paste, oregano, smoked paprika, salt, pepper, and chicken broth. Simmer for a few minutes until the liquid is reduced, then stir in the peas.
  7. Spread the meat mixture into an 11x7 baking dish. Add mashed sweet potatoes on top and spread it evenly across the top.
  8. Bake for 15 minutes and enjoy!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for a minute and a half or so!
