The Secret to a Healthier Snowball Cookie

  1. Almond Flour: As mentioned, almond flour is a key ingredient in these cookies. It's a great source of healthy fats and fiber, which helps to keep you full longer. It also adds a deliciously nutty flavor that elevates the cookies from ordinary to extraordinary.
  2. Natural Sweeteners: By using stevia, monk fruit, or your sweetener of choice, these cookies are naturally sweet without the sugar rush. They also make them suitable for low-carb diets like keto or paleo, if you’re following those eating plans.
  3. No Refined Sugar: The classic snowball cookie relies on powdered sugar for its sweetness, but we’re ditching that in favor of healthier alternatives. Not only does this cut down on empty calories, but it also makes these cookies friendlier for anyone watching their sugar intake.

How To Make Them

  1. Preheat your oven to 325°F. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Combine all ingredients in a medium to large mixing bowl except for the nuts (if using) with a rubber spatula until just combined. Gently fold in the nuts if using.
  3. Form 30 snowball cookies. Bake for 10-12 minutes.
  4. Allow the cookies to cool for 5-8 minutes. Roll the cookies in additional powdered monk fruit & enjoy!
