These Almond Flour Snowball Cookies are my healthy twist on the classic Christmas cookie that so many of us love! They taste just as good, if not better because they are made with simple, wholesome ingredients! They are gluten free, grain free, and sugar free. What You Will Need
- 2 cups almond flour – Get almond flour at a discount at Prozis with the code “KATIE10”
- 6 tbsp grass fed butter, softened (can also substitute coconut oil if desired)
- 1/4 cup powdered monk fruit (or powdered sugar substitute of choice) Code COOKINGKATIE15 for 15% off @lakanto monk fruit sweeteners
- 1/2 tsp vanilla extract
- 1/3 cup nuts (I did a mixture of chopped walnuts & pecans)
How To Make Them
- Preheat your oven to 325°F. Line a baking sheet with parchment paper or a silicone baking mat.
- Combine all ingredients except for the nuts with an electric mixer until just combined. Gently mix in the nuts by hand.
- Form 30 snowball cookies. Bake for 10-12 minutes.
- Allow the cookies to cool. Dust in additional powdered monk fruit & enjoy!
How To Store Leftovers
Store your leftover donut twists in an air tight container in a cool, dry place for up to 2 days or in the fridge for up to 5. To reheat them, just pop them in the microwave for about 10 seconds or in the oven at 350 for 5 minutes or so.
