  • 2 tbsp organic olive oil
  • 1 bunch green onions, diced
  • 3-4 organic celery stalks, sliced
  • 2 large organic carrots peeled and sliced
  • 2 tsp minced garlic

  • 3 cups organic baby spinach
  • Juice of 1 lemon
  • 1/4 cup fresh dill
  • Rosemary sprigs to taste
  • Lemon slices for garnish

How To Make It

  1. Heat the olive oil in a large pot or Dutch oven over medium to medium high heat. Add the green onions, celery, and carrots. Cook for 5 to 8 minutes, until the vegetables are softened and fragrant.
  2. Stir in the minced garlic, fresh thyme, and lemon zest. Season with salt and freshly ground pepper.
  3. Pour in the chicken broth and bring to a boil. Add the orzo and cook for about 10 minutes.
  4. If using raw chicken, add it to the pot with the broth. Let it simmer for about 15 minutes or until fully cooked. Remove, shred, and return to the pot.
  5. Taste and adjust seasoning as needed. Stir in the cooked chicken, baby spinach, and fresh dill. Simmer over medium low heat until the spinach is wilted.
  6. Stir in the fresh lemon juice. Top with lemon slices and rosemary sprigs. Let the soup gently simmer on low for another 5 minutes, then serve warm.
