This Lemon Chicken Orzo Soup is arguably my favorite soup. Like ever. I know that is putting standards pretty high, but everyone who has tried this has said the same thing. And on top of that, it is so incredibly nourishing, cozy, and full of clean ingredients. Any time I’m chilly or sick this is the first soup that comes to mind. The lemon is so refreshing, it’s not too thick or thin, it’s just…perfect. I also LOVE this Crock Pot Chicken & Gnocchi Soup and this Crock Pot Chicken & Wild Rice Soup around this time of the year!

  • Lemon: Not only does it taste good, but lemon actually has so many health benefits. They are full of vitamin C, which is great for your immune system. One lemon contains about 50mg of vitamin C, which is over half the amount needed in your daily diet. They can help with weight management. The pectin fiber found in lemons expands once you digest it, making you feel fuller for longer. I could go on and on about lemons hehe.
  • Orzo: Whole grain orzo is known to improve your metabolism due to its fiber content, relive fatigue due to it’s strong carbohydrate content. Compared to other pastas, orzo is higher in protein as well.

Ingredients

  • 2 tbsp organic olive oil
  • 1 bunch green onions, diced
  • 3-4 organic celery stalks, sliced
  • 2 large organic carrots peeled and sliced
  • 2 tsp minced garlic
  • 1 tsp fresh thyme
  • 20 oz. cooked chicken breasts (can use raw too and add in step 3 of the instructions)
  • Zest of 2 lemons

  • Salt and freshly ground pepper to taste
  • 3/4 cup orzo
  • 3 cups organic baby spinach
  • Juice of 1 lemon
  • 1/4 cup fresh dill
  • Rosemary sprigs to taste
  • Lemon slices for garnish

How To Make It

  1. Heat up the oil in a large pot over medium/high heat (I use my Dutch oven). Add in your green onions, celery, & carrots. Cook until vegetables are soft, 5-8 minutes.
  2. Stir in the garlic, thyme and lemon zest. Season with salt and pepper to taste.
  3. Add in your chicken broth. Bring to a boil & add orzo. Cook for 10 minutes If you are using raw chicken, add it in with the broth. Allow chicken to cook for 15 minutes, shred it, and return back to pot.
  4. Test for seasoning. Stir in the cooked chicken, spinach and dill. Simmer on medium/low heat until spinach is wilted.
  5. Next, mix in the juice of one lemon. Top with fresh lemon slices and rosemary. Simmer for another 5 min on low heat and enjoy!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for a minute or so!
