Ingredients

  • Chicken – 1 1/2 pounds of boneless, skinless chicken breasts
  • Yellow Onion – 1/2 of a large yellow onion, diced.
  • Garlic – 2 teaspoons of garlic, minced.

  • Heavy Whipping Cream – 1 cup or organic heavy whipping cream.
  • Corn Starch – 1 tablespoon corn starch to mix in with your heavy whipping cream to thicken the soup.
  • Carrots – 1 1/2 cups of shredded carrots.
  • Celery – 3 sticks of celery, chopped small.
  • Spinach – 4 cups of fresh organic baby spinach, chopped.
  • Parsley – 2 teaspoons of dried parsley.
  • Thyme – 1 teaspoon dried thyme.
  • Garlic Powder – 1 teaspoon of garlic powder.
  • Rosemary – 1 teaspoon of dried rosemary.
  • Salt & Pepper – To taste.
  • Gnocchi – 1 16-ounce package of gnocchi (gluten free if you need to).

How To Make It

  1. In a large crock pot, add the chicken broth, onion, celery, carrots, garlic, spices, and chicken breasts. Cook on high for 4 1/2 hours.
  2. When there are 45 minutes left of cooking, cook your gnocchi according to your package directions. Typically, this is just simply placing the gnocchi in boiling water until they rise to the surface.
  3. Remove your chicken breasts and shred them. Place back in the crock pot along with the cooked gnocchi.
  4. Next, mix the cornstarch in with the heavy whipping cream and whisk until smooth. This will help the soup thicken.

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for a minute and a half or so!
