  • Black pepper (to taste)
  • Orange Honey Dijon Dressing:
  • 1/4 cup olive oil (extra virgin)
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp garlic (minced)
  • 2 tbsp orange juice (freshly squeezed)
  • Zest of 1 orange
  • Salt (to taste)
  • Black pepper (to taste)
Instructions
  1. 1
Preheat your oven to 425°F and line a medium baking sheet with parchment paper.
  2. 2
Dice the butternut squash into small, bite-sized cubes and spread evenly on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper to taste. Toss to coat, then roast for 20–25 minutes, or until tender and lightly golden.
  3. 3
While the squash is roasting, cook the pearl couscous according to package directions. Set aside.
  4. 4
Prepare the dressing by whisking together the olive oil, apple cider vinegar, honey, Dijon mustard, minced garlic, fresh orange juice, orange zest, salt, and pepper until well combined.
  5. 5
In a large mixing bowl, combine the cooked couscous, roasted butternut squash, chopped kale, microgreens, dried cranberries, pecans, red onion, and crumbled feta.
  6. 6
Pour the dressing over the salad and gently toss until everything is evenly coated.
  7. 7
Serve immediately at room temperature, or while the couscous and roasted squash are still slightly warm. Store leftovers in an airtight container in the refrigerator and enjoy cold.
