This Buffalo Chicken Mac & Cheese is an awesome meal prep or family dinner for all of you buffalo sauce lovers. It is gluten free, super high in protein, and requires very simple ingredients. It is super quick and easy to make too. You can speed up your cooking process even more in the kitchen by using precooked & shredded chicken from Trifecta, where you can purchase ready to go meal prep items! Ingredients

  • 2 tbsp unsalted butter
  • 13.5 oz. banza chickpea elbow macaroni
  • 1 cup 1% small curd cottage cheese, blended
  • 1.5 oz. parmesan cheese, freshly grated (about 1/2 cup)
  • 5 oz. organic sharp cheddar cheese, freshly shredded (about 1 1/4 cup)
  • 3/4 cup @primalkitcen buffalo sauce
  • 1 cup unsweetened almond milk
  • 1 1/2 tbsp cornstarch
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 20 oz. cooked & shredded chicken - I used precooked & shredded chicken from my Trifecta meal prep plan

Instructions

  1. Cook pasta according to package directions. Drain & set aside.
  2. Heat butter in a Dutch oven over medium heat. Add the blended cottage cheese, buffalo sauce & cheese. Cook for 4-5 minutes, or until the sauce is bubbly and has thickened some.
  3. Add in the almond milk. Stir to combine.
  4. Add in the cooked macaroni & chicken. Turn off the heat. Stir well to combine.
  5. Top with green onions and additional buffalo sauce if desired.

How To Store Leftovers

Store them in an air tight container in the fridge for up to 4 days. You can reheat them in the microwave for a minute or so.

Ingredients
  • 20 oz chicken (cooked & shredded)
  • 2 tbsp butter (grass fed is healthiest)
  • 13.5 oz macaroni (I use chickpea pasta to keep it gluten free and add some extra protein)
  • 1 cup cottage cheese (1% small curd)
  • 1.5 oz parmesan cheese
  • 5 oz cheddar cheese (shredded)
  • 3/4 cup buffalo sauce (I like Primal Kitchen as a healthy option)
  • 1 cup almond milk (unsweetened)
  • 1 1/2 tbsp corn starch
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • green onion (for garnish)
