Cook pasta according to package directions. Drain & set aside.
Heat butter in a Dutch oven over medium heat. Add the blended cottage cheese, buffalo sauce & cheese. Cook for 4-5 minutes, or until the sauce is bubbly and has thickened some.
Add in the almond milk. Stir to combine.
Add in the cooked macaroni & chicken. Turn off the heat. Stir well to combine.
Top with green onions and additional buffalo sauce if desired.
