Not gonna lie, I had no clue what chicken salad was until I moved to Florida. I am from California originally and grew up in Colorado for the most part. I literally just thought it was chicken in a salad haha! As soon as I entered a Chicken Salad Chick my life was changed forever. If you don't know what chicken salad is, it is a salad with chicken as the main ingredient, not greens. It is typically made in some sort of sauce and filled with crunchy veggies, fruit, nuts, etc. If you have any chicken salad flavor requests, drop them in the comments below!
I am not a huge fan of mayo (which is a good thing for my health haha!) so I am so obsessed with this buffalo flavor. Most chicken salad has a strong mayo base and it's just not for me! Something that you could also add into this chicken salad is blue cheese. I personally don't like it but I think it would be a great combination for someone who does like it.
Ingredients
Chicken Breasts - 24 ounces of cooked shredded chicken breasts.
Celery - 1/2 cup of celery, diced finely.
Green Onions - 1 bunch of green onions, diced.
Cheddar Cheese - 1/2 cup shredded cheddar cheese, or your favorite kind of cheese!
Buffalo Sauce - 3/4 cup of your favorite buffalo sauce. I love Sweet Baby Rays!
Sour Cream - I used 1/2 cup of light sour cream. You can also use plain, nonfat Greek yogurt.
Sriracha Sauce - To taste. I did a tablespoon or so.
How To Make Them
Mix all ingredients in a large mixing bowl until everything is fully incorporated.
Divide mixture into 16 evenly sized chicken scoops so there are about 1 1/2 ounces of chicken in each scoop. I use two large spoons to do this.
Serve with celery and whatever else you would like!
When I am meal prepping on Sunday, I have my chicken cooking in my crock pot while I am cleaning and getting ready for the work week. My crock pot is one of my best friends. I also prefer to cook my chicken in the crock pot because it turns out so moist and flavorful. It is also way easier to shred after you cook it in the crock pot. I use my standup mixer and it it literally shredded in 10 seconds. Maybe less! Anyways, I just season my chicken with a little bit or garlic salt, onion powder, and pepper. You do not need to much seasoning because of the buffalo sauce & cheese.

How To Store Leftovers
You can store your leftovers in an airtight container in the refrigerator for up to 4 days. They are still safe to eat after that, but from experience I have noticed that the chicken absorbs a lot of the buffalo sauce after that and the flavor is not as strong after 4 days.

1 green onions (1 whole bunch; diced)

¾cup buffalo sauce
