Maple Syrup - 2 tablespoons of sugar free maple syrup, or sweetener of choice. I like the brand Lakanto for my maple syrup because it is sweetened with monk fruit and has no Sucralose or artificial sweeteners!
Brown Swerve - I sprinkled brown swerve on top, but this is optional! I personally love to use Swerve because it is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely safe and natural, with no artificial ingredients, preservatives or flavors.
Preheat your oven to 350°F. Line a baking sheet with parchment paper.
Mix together all of the dry ingredients in a medium bowl. Add in the wet ingredients and mix until fully incorporated.
Form 6 large cookies and line them on your baking sheet. Bake for 7-8 minutes.
Immediately after removing the cookies from the oven, sprinkle some brown swerve on top and allow it to melt into the tops of the warm cookies. This is optional, but I think it makes the most delicious caramelized top!
Store your leftover cookies in an airtight container in a cool, dry place for up to 4 days. You could also store them in the fridge if you prefer. I haven't tried freezing them, but I am sure that would be fine!

1/4tsp baking soda

1/4tsp cinnamon (ground)
1/8tsp nutmeg (ground)
1/4tsp salt
2tsp granular Swerve (or stevia)
1tbsp coconut oil
1/2tsp vanilla extract
1 egg (large)
2tbsp maple syrup (sugar free)
brown Swerve (optional, to top)
