Ingredients

  • Oats – You will need 1 cup of old fashioned rolled oats.
  • Oat Flour – 1 cup oat flour (you can use all-purpose too)
  • Baking Soda – 1/4 teaspoon.
  • Baking Powder – 1/4 teaspoon.
  • Cinnamon – 1/4 teaspoon.
  • Nutmeg– 1/8 teaspoon.
  • Salt – 1/4 teaspoon.
  • Granular Swerve – 2 tablespoons of granular Swerve or Stevia.
  • Coconut Oil – 1 tablespoon. I used the organic coconut oil by Prozis. You can use the code KATIE10 for 10% off!
  • Vanilla Extract – 1/2 teaspoon.
  • Egg – 1 large egg.
  • Maple Syrup – 2 tablespoons of sugar free maple syrup, or sweetener of choice. I like the brand Lakanto for my maple syrup because it is sweetened with monk fruit and has no Sucralose or artificial sweeteners!
  • Brown Swerve – I sprinkled brown swerve on top, but this is optional! I personally love to use Swerve because it is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely safe and natural, with no artificial ingredients, preservatives or flavors.

How To Make Them

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. Mix together all of the dry ingredients in a medium bowl. Add in the wet ingredients and mix until fully incorporated.
  3. Form 6 large cookies and line them on your baking sheet. Bake for 7-8 minutes.
  4. Immediately after removing the cookies from the oven, sprinkle some brown swerve on top and allow it to melt into the tops of the warm cookies. This is optional, but I think it makes the most delicious caramelized top!

How To Store Leftovers

Store your leftover cookies in an airtight container in a cool, dry place for up to 4 days. You could also store them in the fridge if you prefer. I haven’t tried freezing them, but I am sure that would be fine!

Nutritional Benefits

  • Oats – Oats are one of the healthiest grains on earth. They’re gluten-free, whole grain, and a great source of important vitamins, minerals, fiber, and antioxidants. Oats have been proven to be directly linked to weight loss, lower blood sugar levels, and a reduced risk of heart disease.
  • Coconut oil – Some benefits of coconut oil include improved skin, oral health, and weight loss potential. The MCT’s in coconut oil have fat-burning properties!
