Blackened Shrimp & Cheese Grits

This Blackened Shrimp & Cheese Grits is a delicious weeknight dinner that looks way harder than it actually is to make! You can speed up time even more by preparing your seasonings ahead of time and seasoning your shrimp. The shrimp is seasoned to perfection and cooked on a cast iron pan. The grits are so incredibly and cheesy and will just melt in your mouth! I hope you give this recipe a try and love it as much as I do! Nutritional Benefits

  • Shrimp – Shrimp is probably my favorite protein no joke. Shrimp is so low in calories but packed with protein! It is also a great source of iodine, phosphorus, zinc, and magnesium.
  • Grits – Grits are relatively low in fat and calories, but high in fiber and protein!

Ingredients

For the Shrimp:

  • Shrimp – 2 pounds of shrimp – Cooked, peeled, deveined and patted dry.
  • Paprika – 1 tablespoon.
  • Cayenne Pepper – 1/2 teaspoon.
  • Garlic Powder – 1/2 teaspoon.
  • Thyme – 1 teaspoon.
  • Oregano – 1 teaspoon.
  • Sale & Pepper – 1/2 teaspoon.
  • Olive Oil – 1 tablespoon.
  • Chicken Broth – 1 cup of low sodium chicken broth.

For the Cheese Grits:

  • Chicken Broth2 cups of low sodium chicken broth.
  • Almond Milk – 1 1/4 cup of plain, unsweetened almond milk, or milk of choice.
  • Water – 1/4 cup water.
  • Salt – 1 teaspoon.
  • Pepper – 1/2 teaspoon.
  • Grits – 1 cup of quick cooking grits, not instant.
  • Butter – 1/2 tablespoon.
  • Cheddar Cheese – 1/4 cup shredded cheddar cheese
  • Parmesan Cheese – 1 tablespoon of grated Parmesan cheese

How To Make It

  1. In a medium size pot, bring 2 cups of chicken broth, milk, water and salt to a boil. Watch it carefully so it doesn’t boil over. Stir in the grits. Bring to a boil, reduce heat, cover with a lid and simmer for 30 minutes.
  2. In the meantime, coat the shrimp with the spices.
  3. Just before the grits are done, heat a large cast-iron wok with the olive oil over medium/high-heat.
  4. Add the shrimp, and cook until the spices are blackened and the shrimp is cooked.
  5. Stir in the butter and cheese into your grits. Remove grits from heat.
  6. Add chicken broth to the cast iron skillet to deglaze. Cook for a minute over medium heat until it reduces by half. This is your sauce to drizzle over your dish!
  7. Divide the grits among 6 plates and top with shrimp and sauce. Enjoy!
