Dairy-Free Vanilla Coconut Protein Ice Cream (Ninja CREAMi)

Ingredients
  • 14 oz. coconut milk (unsweetend, organic)
  • 1/4 cup monk fruit (¼ to ⅓ cup – adjust based on how sweet you like it)
  • 1 1/2 tsp vanilla extract (organic)
  • 1 scoop unflavored protein powder (optional; I used the Forall brand in this recipe.)
Instructions

    In your Ninja CREAMi pint container, whisk together the coconut milk, monk fruit, vanilla extract, and unflavored protein powder (if using). Make sure it’s fully smooth and everything is well incorporated.

    Seal the pint container and freeze flat for at least 24 hours, or until fully solid.

    Remove the frozen pint from the freezer and place it in your Ninja CREAMi machine. If you’re using the Ninja CREAMi Deluxe 11-in-1 Soft Serve Maker, use the “Lite Ice Cream – Soft Serve” setting. If you have the original Ninja CREAMi, select the “Lite Ice Cream” setting. If the mixture looks crumbly after the first spin (this can happen if it is super cold), simply add a splash of coconut milk or any dairy-free milk and hit “Re-spin.”

    Serve & Enjoy! If you’re using the soft serve CREAMi, transfer the pint to the dispenser and swirl it into a bowl or cone for that classic soft-serve feel. Top with coconut flakes, cacao nibs, fresh fruit, or anything your heart desires!
