Why These Cookies Are a Game Changer
If you're someone who loves a sweet treat but also wants to stick to healthier eating habits, these cookies are for you. Here’s why they’re the perfect choice for the holiday season (and beyond):
Gluten-Free: These cookies are made without any flour, making them an excellent option for anyone following a gluten-free lifestyle or with sensitivities.
Dairy-Free: Whether you’re lactose intolerant, vegan, or simply avoiding dairy, these cookies are completely dairy-free without compromising on flavor.
Refined Sugar-Free: Instead of using refined sugar, these cookies get their sweetness from natural monk fruit, making them a healthier alternative to traditional sugary holiday treats.
Only 6 Ingredients: Simplicity is key! You don’t need a long list of ingredients to make these cookies. Just six pantry staples are all you need.
Ingredients
Peanut Butter - 1 cup of your favorite almond butter. I used the Prozis Collagen Peanut Butter. I love using this peanut butter because it's low in sugar and has that added protein in it! It is also the creamiest peanut butter I have ever had. You can use the code "KATIE10" for 10% off their site as well!
Egg - 1 large egg, organic
Granular Monk Fruit - 1/3 cup of monk fruit, or your preferred sweetener
I put my leftovers in an airtight container in a cool, dry place on my kitchen counter. They are good for about 5-6 days, if they even stand a chance for that long on your counters haha!
