Ingredients

  • Peanut Butter - 1 cup of your favorite almond butter. I used the Prozis Collagen Peanut Butter. I love using this peanut butter because it's low in sugar and has that added protein in it!   • Egg - 1 large egg, organic
  • Granular Monk Fruit - 1/3 cup of monk fruit, or your preferred sweetener
  • Baking Soda - 1/2 tsp baking soda.
  • Vanilla Extract - I used 1 teaspoon.
  • Salt - 1/4 teaspoon

How To Make Them

  1. Preheat your oven to 350°F. Line a large baking sheet or two medium baking sheets with parchment paper or a silicone baking mat.
  2. Combine all ingredients in a large bowl until fully incorporated with a whisk or rubber spatula. I use a combination of both.
  3. Using a standard sized cookie scoop, scoop out 12 cookies, placing them a half inch apart.
  4. Slightly press down on each cookie and bake for 10-11 minutes.
  5. Allow cookies to cool for 5 minutes and then dig in! Dip in some chocolate if you want to be festive!

How Do You Store Leftovers?

I put my leftovers in an airtight container in a cool, dry place on my kitchen counter. They are good for about 5-6 days, if they even stand a chance for that long on your counters haha!

  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt
