Flourless Peanut Butter Cookies

These Flourless Peanut Butter Cookies only require 6 ingredients, are incredible soft, and low carb! You can truly customize these in so many ways by using any nut butter of choice. You will want to make these over and over again because they just melt in your mouth and you can have more than one cookie at a time without feeling guilty.

These cookies only have 1 gram of net carbs each and no added sugar. No one will believe you that these are actually healthy for you when you make these for them! I used a collagen peanut butter, which also made these cookies packed with protein!

Ingredients

  • Peanut Butter – 1 cup of your favorite almond butter. I used the Prozis Collagen Peanut Butter. I love using this peanut butter because it’s low in sugar and has that added protein in it! It is also the creamiest peanut butter I have ever had. You can use the code “KATIE10” for 10% off their site as well!
  • Egg – 1 large egg.
  • Granular Swerve – 1/3 cup of granular Swerve, which is my go-to when it comes to sugar alternatives. Swerve is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely safe and natural, with no artificial ingredients, preservatives or flavors. It is safe for diabetics and Keto approved. You can purchase Swerve off of Amazon here!
  • Baking Soda – 1/2 tsp baking soda.
  • Vanilla Extract – I used 1 teaspoon.
  • Salt – 1/4 teaspoon, plus more to top (optional)

How To Make Them

  1. Preheat your oven to 350°F. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Combine all ingredients in a large bowl until fully incorporated with a whisk or by using an electric mixer.
  3. Using a standard sized cookie scoop, scoop out 18 cookies, placing them a half inch apart.
  4. Slightly press down on each cookie and bake for 11 minutes.
  5. Allow cookies to cool for 5 minutes and then dig in!

How Do You Store Leftovers?

I put my leftovers in an airtight container in a cool, dry place on my kitchen counter. They are good for about 5-6 days, if they even stand a chance for that long on your counters haha!
