These Grab-And-Go Egg Bites are so light, fluffy, flavorful, and packed with protein! You can customize them in so many different ways as well and are so easy to make. They are also only 60 calories each so you can't beat that!
This is a really awesome and quick breakfast to enjoy during those busy weeks that aren't your typical oats or yogurt parfaits! All you have to do is pop them in the microwave for about 30 seconds. What You Will Need
Eggs - You will need 5 large eggs, whisked.
Egg Whites - 12 tablespoons of liquid egg whites.
Ham- 12 thin slices of thinly sliced ham. Try to look for a low sodium, uncured ham with no preservatives and nitrates.
Shredded Cheese - Feel free to use any flavor you would like! I used 1/4 cup of shredded fiesta style cheese.
Mini Bell Peppers - 3 mini bell peppers, thinly sliced.
Spinach - 1 handful of spinach, chopped finely.
Salt & Pepper - To taste.
How To Make It
Preheat oven to 400°F. Spray a standard sized muffin tin with non-stick spray.
Combine the whisked eggs and egg whites in a small measuring cup.
Place a slice of ham in each muffin tin.
Sprinkle shredded cheese evenly on top of each slice of ham. Pour the egg mixture evenly into each muffin tin. Top with the mini bell peppers and spinach.
Store your egg bites in an air tight container in the fridge for up to 5 days. To reheat then, pop them in the microwave for about 30-45 seconds. If you choose to freeze these, wrap them up in a paper towel and microwave them for a minute at a time.

¼cup fiesta blend shredded cheese
3 mini bell peppers (colors of choice)
½cup baby spinach, chopped
12 slices ham
