Why Greek Yogurt?

Greek yogurt is a fantastic addition to any baking recipe. It not only adds moisture but also boosts the protein content, making your banana bread more satisfying. Plus, it can replace oil or butter, reducing the overall fat content without sacrificing taste.

What You Will Need

  • Loaf Pan - 1 standard sized loaf pan to bake your banana bread in. Spray it with a little bit of non-stick spray.
  • Flour - 1 3/4 cups of organic oat or all-purpose. I have not personally tried this recipe with almond flour, but I know some people who have and they said it turned out great!
  • Bananas - 3 medium ripe bananas, mashed. Be sure that they are pretty ripe because that will determine how sweet your bread is!
  • Greek Yogurt - 1 cup of plain, nonfat Greek yogurt. This is the key ingredient to getting the most moist & fluffy cake! Or you can do 1.2 cup of Greek yogurt and 1.2 cup of unsweetened applesauce.
  • Eggs- You will need 2 large organic eggs.
  • Vanilla Extract - 1 teaspoon, for flavor.
  • Granulated Sugar Substitute- 1/2 to 3/4 cup of monk fruit, which is my go-to when it comes to natural, zero-calorie sugar alternatives. You could also use Swerve,
  • Salt - 1/2 teaspoon.
  • Baking Soda - 1 teaspoon, to make the bread rise.
  • Cinnamon - 1 teaspoon, for flavor.
  • Nutmeg - 1/2 teaspoon, for flavor.
  • Brown Sugar Substitute - This is optional, but I will use either a mixture of brown monk fruit and cinnamon to sprinkle on top or I will make a little streusel topping (streusel recipe below).

How To Make It

  1. Preheat oven to 350°F and line a 9x5 inch loaf pan with parchment paper.
  2. In a medium bowl, mix together the mashed banana, Greek yogurt, monk fruit, vanilla extract, and eggs until fully incorporated.
  3. Add in the flour, salt, baking soda, cinnamon, and nutmeg and mix until just combined. Don’t over mix! Fold in any optional mix ins, such as chocolate chips or nuts.
  4. Pour into loaf pan. Top with the optional streusel topping if desired.
  5. Bake for 55-60 minutes, or until top is browned and a toothpick comes out clean. Allow to cool completely before slicing. Store in the refrigerator for up to 6 days for ultimate freshness, or in a cool, dry place for up to 4 days.

Optional Streusel

To make a streusel topping, simply combine the following ingredients in a small bowl:

  • 1/4 cup flour
  • 1/8 cup monk fruit
  • 1/2 tsp cinnamon
  • 2 tbsp grass-fed butter

How To Store

Store your Banana Bread Store in the refrigerator for up to 6 days for ultimate freshness, or in a cool, dry place for up to 4 days. You can freeze it for up to 3 months as well.

Do You Eat Banana Bread Warm or Cold?

These are honestly amazing both ways. Personally, I like to warm it up a little in the microwave or in the toaster, but it is great both ways!
