What You Will Need
For The Muffins:
2 cups organic all purpose flour (gluten free all purpose and oat will also work)
Preheat oven to 425°F and line a muffin tin with liners.
In a small bowl, combine all of the streusel ingredients and set aside.
In another small mixing bowl, mix the monk fruit, butter, Greek yogurt, almond milk, and vanilla extract with an electric mixer until smooth and creamy.
In a larger mixing bowl, combine the flour, baking powder, salt, cinnamon, and espresso powder.
Pour the wet into the dry and mix until fully incorporated. Do not over mix!
Fold in the chocolate. Bake at 425°F for 7minutes and then lower the heat to 350°F and bake for an additional 10 minutes. Allow to stand 10 minutes before enjoying.

1/2cup monk fruit

1tsp vanilla extract
140g dark chocolate (organic dark chocolate chips or chopped chocolate. I like the brand Hu (1/2 heaping cup apx))
