Ingredients
    Strawberries
  • 3 1/2 cups strawberries (thinly sliced)
  • 2 tablespoons butter (grass-fed, softened)
  • 1/2 teaspoon cinnamon
  • Loaf
  • 1/2 cup milk (of choice)
  • 3/4 cup Greek yogurt (plain nonfat)
  • 2 teaspoons vanilla extract
  • 2 eggs (large)
  • 1 1/4 cups flour (all-purpose)
  • 1/4 cup monk fruit sweetener (or sweetener of choice)
  • 2 tablespoons cornstarch
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • Streusel
  • 1/4 cup oat flour (or all-purpose flour)
  • 1 tablespoon butter (grass-fed, softened, or coconut oil)
  • 1/8 cup brown monk fruit sweetener (or coconut sugar, or sweetener of choice)
  • 1/4 teaspoon cinnamon
Instructions
  1. 1
Cook the strawberries. Heat the butter in a medium skillet over medium heat. Add the sliced strawberries and cinnamon and cook for 5–6 minutes, stirring occasionally, until the strawberries are softened. Remove from the heat and set aside.
  2. 2
Prep the oven and loaf pan. Preheat the oven to 325°F. Line a loaf pan with parchment paper for easy removal and lightly spray with avocado oil.
  3. 3
Make the loaf batter. In a large mixing bowl, whisk together the milk, Greek yogurt, vanilla extract, and eggs until smooth. Add the flour, monk fruit sweetener, cornstarch, baking powder, baking soda, salt, and cinnamon. Gently mix until just combined, being careful not to overmix.
  4. 4
Add the strawberries. Gently fold about 3/4 of the cooked strawberries into the batter, reserving the remaining 1/4 for the top.
  5. 5
Make the streusel. In a small bowl, mix together the oat flour, softened butter, brown monk fruit sweetener, and cinnamon until fine crumbles form.
  6. 6
Assemble the loaf. Pour the batter into the prepared loaf pan and spread it into an even layer. Spoon the reserved strawberries over the top, then evenly sprinkle with the streusel.
  7. 7
Bake. Bake for 50–55 minutes, or until the center is set and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  8. 8
Cool and serve. Allow the loaf to cool in the pan for about 1 hour before removing, slicing, and serving. Enjoy!
