Healthy Freezer Breakfast Burritos

You no longer have an excuse to skip breakfast with these Healthy Freezer Breakfast Burritos. The most delicious and easy breakfast burritos are coming your way! I love freezer breakfast burritos because they are so customizable. You can put any of your favorite breakfast fixings in it and voila! I also love these because they are full of protein and will keep you full all morning long!

These breakfast burritos are only about 250 calories & have 21 grams of protein with the add ins that I chose to do! I know everyone will probably put different burrito fillings in but I still wanted to provide the macros of mine below so that you can have a general idea! Ingredients

  • Tortillas - I used 8 carb counter tortillas. I love these carb counter tortillas because they are only 45 calories each and packed with fiber!
  • Eggs - 8 large eggs.
  • Egg Whites - 6 tablespoons of liquid egg whites. I just buy mine in the carton to make it easy!
  • Potatoes- 3 cups of frozen diced breakfast potatoes.
  • Turkey Sausage - 16 ounces of turkey sausage. I prefer the brand Butterball.
  • Cheddar Cheese - 1 cup of mild shredded cheddar cheese.
  • Bell Pepper - 1/2 of a large red bell pepper, diced.

Optional Add-Ins

  • Tomatoes
  • Onion
  • Spinach
  • Refried Beans
  • Bacon
  • Cilantro

How To Make Them

  1. Cook the breakfast potatoes according to package directions.
  2. While your potatoes are cooking, also cook your turkey sausage and scramble your eggs.
  3. Preheat your oven to 400°F and assemble your breakfast burritos - Divide the eggs, potatoes, sausage, bell pepper, and cheese (about 2 tbsp or so in each) between the 8 low carb tortillas.
  4. Wrap each breakfast burrito up and cover in foil. Line on a baking sheet and bake for 10 minutes.
  5. Place the burritos (still wrapped in the foil) in the freezer once they cool down.
  6. When you are ready to reheat them, bake in the oven at 400°F covered in the foil for 35-40 minutes OR microwave (wrapped in a paper towel) for 2-3 minutes. Serve with your favorite hot sauce or sugar free ketchup!

Wrapping Tips

Wrapping up burritos can be tedious I know! Warming up the tortillas will help prevent them from ripping. Also, be sure to not overstuff your burritos! When you are rolling up your burritos, work on a flat surface, fold the sides of the burrito in first, and then roll away!

Freezing Tips

Place your breakfast burritos wrapped in the foil very tightly in air tight & freezer-safe containers such as these. This will prevent the breakfast burritos from getting a freezer burn. You could also place them in a large zip lock bag to help. Store them in the freezer for up to 3 months.

  • 8 large eggs
  • 6 tbsp liquid egg whites
  • 3 cup frozen diced potatoes
  • 1 cup mild shredded cheese
  • ½ large red bell pepper (diced)
  • 16 oz turkey sausage
Instructions
  1. Cook the breakfast potatoes according to package directions.
