Healthy Gingerbread Man Cookies

These Healthy Gingerbread Man Cookies taste just as good as the originals, but they are made with wholesome ingredients, and do not have any added sugar! They are only 75 calories each as well. What You Will Need

  • 2 tbsp unsalted grass fed butter or coconut oil, softened
  • 1 egg, room temperature
  • 1/4 cup monk fruit - Code COOKINGKATIE15 for 15% off Lakanto Monk Fruit Sweeteners!
  • 1 ½ tsp vanilla extract
  • ¼ cup organic molasses
  • 1 1/3 cup organic flour (gluten free or oat works too)
  • ¾ tsp organic cornstarch
  • ¼ tsp baking powder
  • 1 ½ tsp ground ginger
  • ¼ tsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ tsp cloves
  • ¼ tsp salt

How To Make Them

  1. Preheat oven to 325°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream together the butter, monk fruit, and vanilla extract until smooth with a standing mixer.
  3. While your mixer is on a lower speed (2) add in all the remaining ingredients just until fully incorporated. Chill dough for at least 1 hour.
  4. Roll out the dough between two pieces of parchment paper until the dough is about 1/8th inch thick.
  5. Use a gingerbread cookie cutter to form as many cookies as you can. Place the gingerbread men on a parchment lined baking sheet. Collect the excess dough and roll it out again to make more gingerbread men. You should be able to make 15 gingerbread cookies total.
  6. Bake for 8 minutes and allow to cool completely on the baking sheet.

How To Store Leftovers

Store your leftovers in an air tight container in a cool, dry place for up to 5 days or in the fridge for up to 7. You can also freeze these for up to 6 months.
