In the same skillet, heat over medium-high. Add the ground beef and cook, breaking it apart, until browned.
6 Stir in the taco seasoning. When nearly cooked through, add tomato paste and water. Mix until fully combined and turn off the heat.
7 Assemble your bowls by layering roasted sweet potatoes, ground beef, a scoop of the street corn cottage cheese mixture, and avocado or guacamole.
8 Drizzle with hot honey and serve warm.
