Prepare the dressing by combining half the shallots, lemon juice, lemon zest, 1/3 cup olive oil, and salt & black pepper to taste. Set aside.
Heat remaining 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add garlic and remaining shallots. Sauté for 1 minute. Add the asparagus and sauté for 5 minutes, tossing occasionally, until crisp-tender. Season with salt & pepper to taste. Turn off heat & sit for 5 minutes.
In a mixing bowl, combine the asparagus, dill, pistachios, feta cheese, and dressing. Toss to combine & enjoy!
