Grilled Asparagus Salad

As the sun lingers longer in the sky and the days grow warmer, there's a natural shift in our cravings towards lighter, fresher food. One dish that perfectly encapsulates the essence of summer dining is my Lemon & Feta Grilled Asparagus Salad. Vibrant, nutritious, and bursting with flavor, this recipe not only celebrates seasonal produce but also offers a delightful balance of textures and tastes.

Ingredients

  • 3 tbsp minced shallots (1 1/2-2 shallots)
  • 2 tsp garlic, minced
  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 1/3 cup plus 1 tbsp. olive oil
  • Salt & pepper to taste
  • 1 lb. asparagus, wide ends cut off & chopped in half diagonally
  • 1/3 cup unsalted pistachios
  • 3 tbsp fresh chopped dill
  • 2 oz. feta cheese

How To Make It

  1. Prepare the dressing by combining half the shallots, lemon juice, lemon zest, 1/3 cup olive oil, and salt & black pepper to taste. Set aside.
  2. Heat remaining 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add garlic and remaining shallots. Sauté for 1 minute. Add the asparagus and sauté for 5 minutes, tossing occasionally, until crisp-tender. Season with salt & pepper to taste. Turn off heat & sit for 5 minutes.
  3. In a mixing bowl, combine the asparagus, dill, pistachios, feta cheese, and dressing. Toss to combine & enjoy!

Ingredients
  • 3 tbsp shallots (minced (about 1 1/2 shallots))
  • 2 tsp garlic (organic, minced)
  • 2 tbsp lemon juice (fresh)
  • 1 lemon (zest of 1 lemon)
  • 1/3 cup olive oil (organic, extra virgin, plus 1 tablespoon)
  • 1 lbs. asparagus (organic, wide ends cut off & chopped in half diagonally)
  • 1/3 cup pistachios (unsalted, roughly chopped)
  • 3 tbsp dill (fresh)
  • 2 oz feta cheese
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp pepper (or to taste)
