These Lemon Poppy Seed Protein Pancakes are such a delicious, sweet, and zingy way to pack extra protein into your breakfast. This recipe makes 6 pancakes (3 servings of 2 pancakes). There are only 224 calories a serving with 21 grams of protein! The Greek yogurt makes these pancakes so unbelievably fluffy and melt right in your mouth. What You Will Need
- Flour - 3/4 cup of flour. Oat or all purpose work.
- Protein Powder - 30 grams of vanilla or unflavored flavored protein powder.
- Baking Powder- 1 teaspoon.
- Salt - 1/4 teaspoon, for flavor.
- Monk Fruit- 1 tablespoon of granulated monk fruit, Swerve or stevia.
- Poppy Seeds - 1/8 cup.
- Lemon Juice - 1/4 cup of freshly squeezed lemon juice.
- Greek Yogurt - 3/4 cup of plain, nonfat Greek yogurt.
- Egg - 2 eggs
- Almond Milk - 1/4 cup of unsweetened almond milk.
How To Make Them
- Whisk together all of the dry ingredients until fully incorporated.
- Add the wet ingredients and mix until fully incorporated.
- Preheat a griddle or large skillet over medium and spray with non-stick spray.
- Cook pancakes for about 3 minutes on each side. Makes 6 pancakes. Top with a lemon glaze and/or sugar free maple syrup and enjoy!

There is so set recipe for this. I just make it to taste! Simply combine unsweetened almond milk, lemon juice, and powdered monk fruit until you get your desired consistency & taste!
How To Store Leftovers
Store your leftover Lemon Poppy Seed Protein Pancakes in an airtight container in the refrigerator for up to 4 days. To reheat them, just pop them in the microwave for 20-30 seconds.
Can You Freeze These?
You can certainly make a whole bunch of these in bulk and then freeze them to enjoy over a week or so! The best way to freeze these pancakes is to first make sure they are completely cooled. Then wrap each pancake individually in plastic wrap. This will help them not get freezer burn! Place the individually wrapped pancakes in a plastic bag or Tupperware and freeze away! Microwave them for a minute when you are ready to enjoy them again.
