These healthy No Bake Key Lime Pie Cups are such an easy & refreshing sweet that is full of protein! The secret ingredient = cottage cheese! Cottage cheese can really do everything you guys. No one will believe you when you tell them that these are healthy let me tell you! They are so quick to make and require very basic, minimal ingredients. What You Will Need

For the "Crust"

For the Filling

  • 2 cups of 2% small curd cottage cheese
  • 3 tbsp. sugar free maple syrup - I use the brand Lakanto because it’s sugar free & sweetened with monk fruit. You can use pure maple syrup too, if you aren't watching your sugar!
  • Zest of 2 limes
  • Juice of 2 limes
  • 1-2 tsp monk fruit/stevia/sweetener of choice

How To Make Them

  1. Crush up the sweet thins until small crumbles resemble and mix with melted butter or coconut oil. Set aside.
  2. Combine filling ingredients in a strong food processor until smooth and creamy.
  3. Divide graham cracker crumble among 5 dessert cups (mine are linked here). Top with key lime filling.
  4. Garnish with any reserved crumbs & additional lime zest, if desired.

How To Store Them

Store your leftover key lime pie bars in an air tight container in the freezer. Allow them to thaw for 15 minutes or so before you eat them again to get the perfect texture!

  • 30 sweet thins (Simple Mills brand sweet thins, or graham crackers of choice)
  • 2 tbsp butter (grass-fed, or organic coconut oil)
  • For the Filling
  • 2 cup cottage cheese (2% small curd)
  • 2 limes (juice & zest)
  • 2 tbsp maple syrup (sugar free - I use the brand Lakanto because it is sweetened with monk fruit)
  • 1-2 tsp monk fruit (or sweetener of choice)
