These healthy Strawberry Honey Protein Muffins are are a quick, easy, & high protein breakfast or snack. I am OBSESSED with this flavor. They aren't too sweet, have a little zing from the lemon & strawberries and are so light & fluffy. Each muffin has 6 grams of protein. You probably already have all of these ingredients on hand too. What You Will Need

  • 1 cup plain nonfat Greek yogurt
  • 1/3 cup organic runny honey
  • 1 tsp organic vanilla extract
    1 cup unsweetened almond milk
  • 2 eggs
  • 1 1/2 cups organic oat flour
  • 1 cup organic all-purpose flour
  • 30g protein powder - - I used the Prozis natural vanilla whey- Code KATIE10 for 10% off
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup strawberries, diced
  • 1/2 cup high quality strawberry jam (I use @chiasmash)
  • 2 tsp lemon zest

How To Make Them

  1. Preheat oven to 350°F. Lightly coat 18 muffin tins with nonstick spray or silicone muffin cups.
  2. In a large mixing bowl, whisk together the dry ingredients and then add in the wet (keep the lemon zest, strawberries, and jam separate). Mix until just combined.
  3. Gently fold the berries, jam & zest. You want that swirled look so don’t mix too much.
  4. Divide the batter evenly among the prepared muffins tins. Transfer to the oven and bake for 20-25 minutes or until a toothpick comes out clean. Enjoy!

How To Store Them

Store your leftovers in an air tight container in the fridge for best freshness. Zap them in the microwave for about 20 seconds to reheat!

  • 1/3 cup honey (organic)
  • 1 tsp vanilla extract
  • 1 cup almond milk (or oat milk, unsweetened)
  • 2 eggs (large)
  • 1 1/2 cup oat flour (organic)
  • 1 cup all purpose flour (organic)
