These Almond Flour Shortbread Cookies are my healthy twist on the classic shortbread cookies that we all love! You can make these any time of the year honestly, and just use different shaped cookie cutters! These taste just as good as the originals, if not better because they are made with simple, wholesome ingredients! They are gluten free, grain free, and sugar free as well. What You Will Need

  • 6 tbsp grass fed butter, softened

  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 egg white
  • 2 cups almond flour - Get almond flour at a discount at Prozis with the code "KATIE10"
  • 50g sugar free mini chocolate chips

How To Make Them

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream together butter butter, monk fruit, and vanilla extract.
  3. Add in the remaining dry ingredients. Stir in chocolate chips by hand.
  4. Form 14 cookies. Use a fun Christmas cookie cutters like these if desired. Bake for 12-15 minutes or until golden.

How To Store Leftovers

Store your leftover cookies in an air tight container in a cool, dry place for up to a week.
