These healthy Apple Streusel Protein Pancakes are a quick, easy, minimal ingredient, & high protein Fall breakfast. There are 24 grams of protein per serving! You probably already have all of these ingredients on hand as well. The streusel topping gives the tops of these pancakes the most perfect golden crisp. What You Will Need
3/4 cup oat flour
30g protein powder - I used the Prozis natural vanilla whey- Code KATIE10 for 10% off
1 tsp baking powder
1 tsp cinnamon
Dash nutmeg
1/4 tsp salt
1 galla apple
3/4 cup plain nonfat Greek yogurt
1 egg
3/2 cup unsweetened almond milk
1 tsp vanilla extract
For the streusel I used a zero calorie brown monk fruit sweetener, but you can use coconut sugar or anything else you’d like! This is what caramelizes on the griddle & gives that streusel topping!

How To Make Them
Mix all of the dry ingredients together in a mixing bowl. Add in wet ingredients & whisk until creamy and smooth. Fold in the apples.
Divide batter into 6 pancakes on a griddle/skillet and cook on the first side for about 3 minutes.
While the first side is cooking, sprinkle the brown sugar substitute & cinnamon on top of the uncooked side of the pancakes. Flip, & cook for another 3 min or so. Serve with glaze, maple syrup, etc.
How To Store Them
Store your leftovers in an air tight container in the fridge. Zap them in the microwave for about 30 seconds to reheat!
