In a small blender, combine the egg, almond milk, vanilla extract, protein powder, and pinch of salt. Blend, pour into a bowl, and set aside.
In a small mixing bowl, combine the the cream cheese, lemon juice, Greek yogurt, and blueberries. Spread mixture evenly among 3 slices of bread. Top with remaining 3 slices of bread to create a "sandwich".
Preheat a large skillet or griddle with a little bit of butter or over medium heat.
Drench each piece of stuffed French toast generously in the protein egg mixture.
Place each slice in your preheated skillet and cook for about 2-3 minutes on each side. Enjoy!
