Berry Cream Cheese Stuffed Protein French Toast

This Berry Cream Cheese Stuffed Protein French Toast is so easy to make and will satisfy that sweet tooth with zero guilt! They are also only 234 calories a serving and have no added sugar. These are also super low carb thanks to the new Royo Bread low carb bread! There are only 13 grams of net carbs per serving. Ingredients

For the French Toast:

  • Low Carb Bread – I used 4 slices of the Eat Royo Low Carb Artisan Bread. I love these because they are full of whole grains, keto friendly, high fiber, non-GMO, and only 30 calories a slice! Use the code COOKINGKATIELADY at checkout to get 10% off your order!
  • Almond Milk – I used 1/2 cup of unsweetened vanilla flavored almond milk. You can use any kind of milk you would like though, such at oat milk.
  • Egg – 1 large egg
  • Protein Powder – Use 30 grams of your preferred protein powder. My personal favorite protein powder is by the brand Prozis (either the zero diet whey vanilla or the natural vanilla whey isolate). You can use the discount code “KATIE10″ for 10% off at Prozis!
  • Cinnamon – I used 1 teaspoon of ground cinnamon.
  • Nutmeg – 1/4 teaspoon, for flavor.
  • Vanilla Extract– I used 1 teaspoon, for flavor.
  • Salt – Just a pinch, for flavor.

For the Blueberry Syrup:

For the Filling:

  • 3 tablespoons of low fat cream cheese
  • 1 tablespoon confectioner’s swerve, or powdered sugar substitute of choice.

How To Make It

  1. In a small pot, add the frozen blueberries and sugar free syrup over medium heat. Smash about half the blueberries to make your sauce. Turn off the heat and set aside.
  2. Mix together the cream cheese and confectioners swerve in a small bowl and set aside.
  3. Preheat a large skillet or griddle with a little bit of butter or nonstick spray over medium heat.
  4. Whisk all ingredients together for the French toast mixture in a medium mixing bowl. Drench each slice of bread generously in the protein egg mixture.
  5. Place each slice in your preheated skillet and cook for about 3 minutes on each side. Set the French toast on a plate.
  6. Add half of the cream cheese & 1/4 of the blueberry syrup in between two pieces of the French toast. Repeat for the other two slices.
  7. Top the French toast with the remaining blueberry syrup and enjoy!

You can keep your protein French toast in an airtight container in the fridge for up to 3 days! These can be a great breakfast meal prep. To reheat them, just pop them in the microwave for about 20 seconds. They don’t need much time to warm up at all!
