Blueberry Muffin Greek Yogurt Protein Waffles

Ingredients
    Waffles
  • ¾ cup flour (all-purpose)
  • 30 g protein powder (I love Truvani. Use the discount code "KATIE10" at Truvani for 10% off your order)
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup milk
  • 3/4 cup Greek yogurt (full-fat)
  • 1 tsp vanilla extract
  • 3/4 cup blueberries (fresh)
  • Streusel
  • 1 tsp cinnamon
  • 1/4 cup flour (all-purpose)
  • 1/4 cup brown monk fruit sweetener
  • 2 tbsp butter (grass-fed, softened)
Instructions

    In a small mixing bowl, combine all streusel ingredients. Use a fork to mix until fine crumbles form. Set aside.

    In a large mixing bowl, whisk together the flour, protein powder, cinnamon, baking powder, and salt.

    Add the eggs, milk, Greek yogurt, and vanilla extract. Mix until just combined.

    Fold in the blueberries. The batter should be thick, but if it seems too thick, add a splash of milk as needed.

    Preheat your waffle maker and lightly spray it with avocado oil spray.

    Pour the batter into the waffle maker, dividing it evenly between waffles. This recipe makes approximately 6 large waffles, so you'll need to work in batches.

    Sprinkle the streusel evenly over the batter, then close the waffle maker and cook according to your manufacturer's instructions.

    Repeat until all waffles are cooked. Serve warm with maple syrup and enjoy.
