- ¾ cup flour (all-purpose)

- 1 tsp baking powder
- ½ tsp salt
- 2 eggs
- ½ cup milk
- ¾ cup Greek yogurt (full-fat)
- 1 tsp vanilla extract
- ¾ cup blueberries (fresh)
Streusel
- 1 tsp cinnamon
- ¼ cup flour (all-purpose)
- ¼ cup brown monk fruit sweetener
- 2 tbsp butter (grass-fed, softened)

How To Make Them
- In a small mixing bowl, combine all streusel ingredients. Use a fork to mix until fine crumbles form. Set aside.
- In a large mixing bowl, whisk together the flour, protein powder, cinnamon, baking powder, and salt.
- Add the eggs, milk, Greek yogurt, and vanilla extract. Mix until just combined.
- Fold in the blueberries. The batter should be thick, but if it seems too thick, add a splash of milk as needed.
- Preheat your waffle maker and lightly spray it with avocado oil spray.
- Pour the batter into the waffle maker, dividing it evenly between waffles. This recipe makes approximately 6 large waffles, so you’ll need to work in batches.
- Sprinkle the streusel evenly over the batter, then close the waffle maker and cook according to your manufacturer’s instructions.
