Chicken Caesar Salad Smash Tacos

Ingredients
    For the Chicken Smash Tacos
  • 1 pound ground chicken
  • 6 flour tortillas (I use Siete almond flour tortillas for a gluten free clean option)
  • 1 egg (large, organic)
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 2 tablespoons avocado oil (divided)
  • 1/2 cup Parmesan (freshly grated, or to taste)
  • For the Caesar Salad
  • 1 medium head romaine lettuce, chopped
  • 1/4 cup pine nuts (toasted)
  • 1/4 cup Parmesan (freshly grated)
  • black pepper (Freshly cracked to taste)
  • Croutons (optional, if not GF)
  • Caesar dressing (to taste; about ½ jar, depending on preference. I like Primal Kitchen)
Instructions

    In a medium mixing bowl, combine the ground chicken, egg, salt, black pepper, garlic powder, onion powder, paprika, and parsley. Mix until everything is fully incorporated.

    In a separate mixing bowl, combine the chopped romaine, toasted pine nuts, Parmesan, freshly cracked black pepper, Caesar dressing, and croutons, if using. Toss until evenly coated.

    Divide the ground chicken mixture into six equal portions. Spread one portion in a thin, even layer over one side of each tortilla, pressing the chicken all the way to the edges.

    Heat a small amount of avocado oil in a large skillet over medium-high heat. Once hot, place one tortilla chicken-side down in the skillet.

    Cook undisturbed for about 4 minutes, or until the chicken is golden brown and fully cooked through to an internal temperature of 165°F (74°C).

    Sprinkle freshly grated Parmesan over the tortilla, then carefully flip and cook tortilla-side down for about 1 additional minute, or until lightly crisp.

    Repeat with the remaining tacos, adding more avocado oil to the skillet as needed.

    Spoon a generous amount of Caesar salad onto the chicken side of each taco.

    Fold each tortilla in half and serve immediately with extra Caesar dressing and freshly grated Parmesan, if desired.
