You can store your leftovers in an airtight container in the refrigerator for up to 5 days. When you are ready to enjoy them again, just pop them in the microwave for 30 seconds or so. You can probably freeze these as well, I haven't tried personally.

Preheat your oven to 350°F. Spray a standard sized muffin tin with nonstick spray.
In a small skillet, combine all of the ingredients for the apple filling and cook the apples until caramelized, about 5 minutes. Turn off the heat and set aside.
In a large bowl, whisk together all of the ingredients for the fresh toast except for the bread.
Pour in the bread, and gently mix so that all of the pieces of bread are covered in the egg mixture. The bread should soak up all of the liquid.
Divide the fresh toast mixture among 9 of the muffin cups.
Press down in the middle of each cup so that there is a divot in the middle for the filling.
Divide the apple filling in the centers of each muffin cup. You can also top with some nuts and anything else if desired!
Bake for 12-15 minutes. Top with some sugar free syrup and enjoy!
