These Cinnamon Apple French Toast Cups are so easy to make, low carb, and scream Fall! There are only 4 grams of net carbs thanks to the Royo Bread low carb bread! The apple filling is caramelized to perfection! To top these off, they are only 64 calories & have 5 grams of protein each as well. These only take 12 minutes to bake and reheat great. Reasons to Love These French Toast Cups

  • Quick & Easy: This super and easy to make and require very simple ingredients and equipment. These only take 12 minutes to bake and look way more complicated to make than they actually are.
  • Prep Ahead of Time: You can make these ahead of time to enjoy throughout the week. They reheat in the microwave great and I bet you could even freeze them!
  • Macros: These are very low in calories and carbs. They also have 5 grams of protein each and are packed with fiber. You can’t beat that for French toast!

Nutritional Benefits

  • Eggs: Eggs are incredibly nutritious. They help raise HDL cholesterol, which are those “good” cholesterol levels. They are a great source of vitamin D and protein.
  • Almond Milk: Almond milk is very low in calories and carbs. It is also a great source of vitamin E.
  • Low Carb Bread: Other than being low carb & low calorie, low carb bread is full of fiber & whole grains.
  • Apples: Apples are rich in fiber and antioxidants. They are also low in sodium, fat, and cholesterol.

Ingredients

For the French Toast:

  • Low Carb Bread – 6 slices of low carb bread. I used the Royo Bread Artisan Bread. This bread is only 30 claories a slice and 2 grams of net carbs! Macros below assume this bread. You can use the code COOKINGKATIELADY for 10% off on their site!
  • Eggs– 2 large eggs.
  • Almond Milk – 1/2 cup of unsweetened, vanilla almond milk, or milk of choice.
  • Swerve – 1 tablespoon of granular Swerve or zero calorie sweetener of choice (such as stevia). Swerve is my go-to when it comes to sugar alternatives. Swerve is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely safe and natural, with no artificial ingredients, preservatives or flavors! It is safe for diabetics and Keto approved. You can purchase Swerve off of Amazon here.
  • Vanilla Extract – 1 teaspoon of vanilla extract.
  • Cinnamon – 1/2 teaspoon of ground cinnamon.
  • Nutmeg – Just a dash, about 1/8 teaspoon.

For the Filling:

  • Apples – 2 green apples, diced.
  • Lemon Juice – 1 tablespoon of fresh lemon juice.
  • Syrup – 1/2 tablespoon of sugar free breakfast syrup.
  • Cinnamon – 1/2 teaspoon ground cinnamon.
  • Nutmeg – Dash of nutmeg.

How To Make Them

  1. Preheat your oven to 350°F. Spray a standard sized muffin tin with nonstick spray.
  2. In a small skillet, combine all of the ingredients for the apple filling and cook the apples until caramelized, about 5 minutes. Turn off the heat and set aside.
  3. In a large bowl, whisk together all of the ingredients for the fresh toast except for the bread.
  4. Pour in the bread, and gently mix so that all of the pieces of bread are covered in the egg mixture. The bread should soak up all of the liquid.
  5. Divide the fresh toast mixture among 9 of the muffin cups.
  6. Press down in the middle of each cup so that there is a divot in the middle for the filling.
  7. Divide the apple filling in the centers of each muffin cup. You can also top with some nuts and anything else if desired!
  8. Bake for 12-15 minutes. Top with some sugar free syrup and enjoy!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 5 days. When you are ready to enjoy them again, just pop them in the microwave for 30 seconds or so. You can probably freeze these as well, I haven’t tried personally.
