This Low Carb Buffalo Chicken Bake is creamy, cheesy, and loaded with buffalo flavor. It tastes like pure comfort food but low carb! If you love my buffalo chicken dip, you will really love this buffalo chicken bake. This is a great weeknight dinner because you can make this dish in under 30 minutes.

This is one of my husband’s favorite meals to take with him for lunch during the week!! He is one of those people who is obsessed with buffalo sauce haha. Anything that I make with buffalo sauce is typically gone within 2 or 3 days! I hope you give this recipe a try and love it as much as I do!

Nutritional Benefits

  • Chicken: Chicken is low in calories and high in protein! It is a good source of Vitamin B12 and choline, which is essential for brain development and function. It can help with weight management and decrease your chance of heart disease.
  • Cream Cheese: Cream cheese should be eaten in moderation because of the fat content haha, but it is a great source of vitamin A, low in lactose, and a good source of antioxidants.

Ingredients

  • Chicken – 24 ounces of boneless, skinless chicken breasts or your favorite type of chicken. I always use breasts because they are healthier and low in fat. I seasoned mine with onion powder, garlic salt, and pepper to taste.
  • Buffalo Sauce – 1/4 cup of your favorite buffalo sauce, such as Franks, Primal Kitchen, or Sweet Baby Ray’s.
  • Cream Cheese – 8 ounces of low fat cream cheese, softened. You can use full fat if you are on the Keto diet as well.
  • Cheddar Cheese – 1 cup of mild shredded cheddar cheese, divided.
  • Ranch Seasoning1-2 tablespoons of ranch seasoning, depending on how strong of a flavor you want!
  • Salt & Pepper – To taste
  • Parsley – For garnish, optional

Instructions

  1. Preheat your oven to 375°F. Spray a 9×13 inch glass baking dish with nonstick spray.
  2. Season your chicken with onion powder, garlic salt & pepper to taste. Line the chicken breasts in your baking dish.
  3. In a medium mixing bowl, blend together the cream cheese, Buffalo sauce, ranch seasoning, and 1/2 of the shredded cheddar cheese with a handheld mixer.
  4. Spread the mixture evenly among all of the chicken breasts.
  5. Top the chicken breasts off with the remaining shredded cheese and an extra drizzle of Buffalo sauce, if desired.
  6. Bake for 30 minutes, or until the chicken is fully cooked. Garnish with parsley and enjoy!

How To Store Leftovers

You can store your leftovers that you plan on eating soon in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy these again, just pop them in the microwave for a minute or so.
