You can store your leftovers in an air tight container in the fridge for up to 5 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so.

This Sheet Pan Lemon Chicken & Veggies is made with fresh green beans, cherry tomatoes, lemons, and the perfect blend of seasonings. This is such a fast one pan meal that tastes delicious and is so easy to make! You can customize this dish with any of your favorite veggies.
Preheat your oven to 400°F. Line a large baking sheet with foil (or two medium sized pans if yours isn’t that big!) and set aside.
Add your diced sweet potatoes to the pan with about 1/2 a tablespoon of olive oil. Season with salt & pepper to taste. Make sure the potatoes are fully coated in the seasonings & oil. Bake for 10 minutes.
While the potatoes are baking, season your chicken with all of the seasonings & 1/2 a tablespoon of olive oil.
Scoot the potatoes towards the outside of the pan. Add your remaining veggies to the outside of the pan with the sweet potatoes. Place the chicken in the middle of the pan.
Season the veggies with the veggie seasonings and remaining 1/2 tablespoon of olive oil. Mix with your hands well to make sure everything is fully coated.
Bake for 25 minutes and enjoy! Top with your favorite sauce if desired. I like a little bit of sugar free ketchup!
