How To Make It

  1. Preheat your oven to 400°F. Line a large baking sheet with foil (or two medium sized pans if yours isn’t that big!) and set aside.
  2. Add your diced sweet potatoes to the pan with about 1/2 a tablespoon of olive oil. Season with salt & pepper to taste. Make sure the potatoes are fully coated in the seasonings & oil. Bake for 10 minutes.
  3. While the potatoes are baking, season your chicken with all of the seasonings & 1/2 a tablespoon of olive oil.
  4. Scoot the potatoes towards the outside of the pan. Add your remaining veggies to the outside of the pan with the sweet potatoes. Place the chicken in the middle of the pan.
  5. Season the veggies with the veggie seasonings and remaining 1/2 tablespoon of olive oil. Mix with your hands well to make sure everything is fully coated.
  6. Bake for 25 minutes and enjoy! Top with your favorite sauce if desired. I like a little bit of sugar free ketchup!

Other Veggie Options

I love this combo of veggies but here are some other great ideas of veggies you can substitute mine for or add to!

  • Zucchini
  • Bell Pepper
  • Baby red potatoes
  • Carrots
  • Onion

How To Store Leftovers

You can store your leftovers in an air tight container in the fridge for up to 5 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so.

My favorite storage containers are by the brand Razab. I do giveaways with them and truly love their products so much. All of their containers are BPA free, oven safe, freezer safe, dishwasher save, and have steam release valves! You can find them on Amazon here.
