  • 2 lbs potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp dill
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp parsley

Feta, red onion, tzatziki, and lemon wedges for serving, optional

How To Make Them

  1. Preheat your oven to 425°F. Line a large baking sheet with foil. Set aside.
  2. Wash and dry your potatoes. Slice them into wedges.
  3. In a large mixing bowl, combine the potato wedges, olive oil, and seasonings. Mix well until the potatoes are all coated in the olive oil and seasonings evenly.
  4. Pour the potatoes onto your baking sheet. Bake for 15-20 minutes, or until fork tender. Broil for an additional 5-8 minutes for more golden & crispy potato wedges.
  5. Serve with tzatziki sauce and top with feta, onions, fresh lemon juice, and anything else you would like. Enjoy!
