Heat the olive oil and butter in a Dutch oven over medium/high heat. Add the onions, celery, carrots, salt & pepper. Cook for 5 minutes. Stir in the garlic.
Add in the chicken broth and stir up all the browned bits from the bottom of the pot. Bring to a boil.
Add in your uncooked noodles. Add thyme sprigs and bay leaf. Cook until noodles are al dante.
Finally, add in the cooked chicken and simmer for 10 minutes. Adjust with salt and pepper to taste. Serve with lemon wedges & enjoy!
